Matcha Waffles with Miso Delicatta Puree and Smoked Maple Chocolate

As the cool breeze of fall starts to settle in, there's nothing like starting your day with the warmth of a comforting breakfast. Fall is all about rich flavors, cozy moments, and a sense of indulgence. One of my favorite autumn treats is matcha waffles, paired with the perfect fall twist: smoked maple chocolate. But to make this recipe even more special, I’ll show you how to incorporate the power of adaptogens, like Chaga mushrooms , for an extra boost of wellness.

Why Matcha and Adaptogens?

Matcha, a finely ground green tea powder from Japan, brings a smooth, earthy flavor that beautifully contrasts the sweetness of maple and the richness of chocolate. Its vibrant green hue and subtle umami flavor create an elegant balance, making it a delightful addition to waffle batter. Plus, matcha is packed with antioxidants and offers a natural energy boost — perfect for those crisp fall mornings!

Now, let's talk about chaga mushrooms and adaptogens. Chaga is a powerful adaptogen, a category of herbs and fungi that help the body resist stress and restore balance. Chaga has been used for centuries to support immunity and overall health, making it an ideal addition to your fall wellness routine. When combined with matcha, the health benefits of this breakfast skyrocket, giving you an energizing yet calming start to your day.

Enter Smoked Maple Chocolate

To make this recipe truly special for the fall season, I like to incorporate smoked maple chocolate. This ingredient infuses a touch of smokiness, reminiscent of crackling bonfires, along with the comforting sweetness of maple syrup. It's the ultimate autumnal flavor combo that turns your breakfast into something truly magical. Smoked maple and dark chocolate also add a grounding, earthy element, echoing the benefits of forest bathing — a mindful way to reconnect with nature, even in the comfort of your own kitchen. You can find it in our new FOREST BATH chocolate bar!

For the Matcha Waffles:

- 1 cups all-purpose gluten free flour

- 1 tbsp matcha powder (culinary grade)

- 2 tbsp coconut sugar

- 1 tsp baking powder

-1 tsp baking soda

- ½ tsp salt

- 1 large eggs

- 1 cups milk (or plant-based milk of your choice)

- 2 Tbsp butter, coconut oil or other fat.

Delicatta Puree:

-2 roasted delicatta squash

-1/4 cup plant based milk

-2 tsp miso

-1 tsp lemon juice

Instructions:

1. Make the puree

  • Peal and roast the delicatta squash at 350 degrees for 30 minutes.

  • Add to your blender with milk, miso and lemon, puree until smooth.

2. Make the Matcha Waffle Batter:

- In a large bowl, whisk together the flour, matcha powder, chaga mushroom powder (if using), sugar, baking powder, baking soda, and salt.

- In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract until well combined.

- Gradually pour the wet ingredients into the dry ingredients, stirring until the batter is smooth. Be careful not to overmix — a few lumps are okay!

3. Cook the Waffles:

- Preheat your waffle iron and grease it lightly with nonstick spray or a bit of melted butter.

- Pour the batter onto the waffle iron, using enough to cover the surface but not overflow.

- Cook according to your waffle iron’s instructions, typically for 3-5 minutes, until the waffles are golden and slightly crisp on the edges.

3. Assemble and Serve:**

- Spoon the puree on to the plate and spread with a spoon.

  • Stack the warm matcha waffles on a plate and grate on FOREST BATH and toss a few crumbles of bar.

- For an extra indulgent touch, add a sprinkle of powdered sugar, some fresh berries, or even a dollop of whipped cream.
